It takes more than a year to prepare the perfect San Daniele, and we follow all the stages with love and dedication: salting, resting and seasoning take place under the watchful eye of our master seasoners.

The PDO specification is very strict: it requires the use of only the thighs of selected Italian pigs, salt and the precious microclimate of San Daniele del Friuli. We at Martelli’s allow ourselves just one addition: passion.
